Wine and Food Pairing: Beer and Beef Bolognese have a coming together
This month’s wine and food pairing had a few twists, first, Brandon of Joy Wine and Spirits filled in for Carolyn Joy this month and (secondly) he brought a beer from Ursula Brewery in Aurora and paired it with a Braised Beef Cheek Bolognese prepared by Executive Chef Adam Vero of Hearth and Dram.
The Bolognese is a featured appetizer on Hearth and Dram’s dinner menu (but the dish was filling enough to be a main dish) that includes their house made rigatoni and is topped with Gremolata. The dish can actually be paired with a beer or a wine, so Brandon brought a beer that is rye barrel based that had hints of fig, caramel, and chocolate (it made me wish that I was a beer drinker).
