Spotlight On: Migration Taco Truck- a Live at the Vineyards Food Vendor

Whether you are trying their jerk jackfruit taco, their vegan cheese steak, or even taking one of their vegan cooking classes, Migration Taco Truck  has a little bit of something for everyone. Husband and wife duo Tracy and Ben are owners of Denver’s first Vegan Taco truck and they are out there showing others how it’s done.

You can find them out and about at different businesses in the Denver Metro area, but you won’t want to miss them at the 14th annual Live at the Vineyards serving up their non traditional vegan tacos. They will be bringing their Vegan Carne Asada Tacos with cashew crema and red salsa. Ben and Tracy stopped by KUVO recently to share with us how they got started, some of their crowd favorite dishes and more.
