Meet the Meathead: old school butcher
“Meathead” is the best name I’ve ever heard of for a butchershop. The “head meathead” is Kevin Klinger, who visited First Take to share the wonders of his craft, which are on display behind a floor-to-ceiling window at The Source market, 3350 Brighton Blvd. in Denver’s RiNo neighborhood.
“My grandfather was a butcher, and when I was a kid I was free labor,” says Klinger, whose beef comes from a natural beef ranch in St. Francis, Kansas. “He does things the right way, no pesticides or insecticides, no antibiotics, no hormones, and he processes the beef right there on the ranch.”
