Eats & Beats: La Chiva

La Chiva was created to celebrate Colombian Cuisine which at the time, was lacking in Denver. Starting out as a food truck in 2014, Chef Jorge Aguirre, owner of La Chiva, was focused on bringing a taste of his home of Bogeta, Colombia to the Denver community. The menu has grown from Colombian empanadas and sandwiches to a full cultural experience showcasing the many dishes native to Colombia. La Chiva opened up the doors of its physical location in 2016 and now resides at its permanent location at 1446 S Broadway.

For Hispanic Heritage Month, we wanted to highlight some of the Latin-owned restaurants in our city. On Eats & Beats, we feature a conversation with Jorge Aguirre on the history of this restaurant and a deep dive into a few of the dishes I ordered on my visit.
