Convivio Café: Building Community Over Cafecito
From a bean to a full-blown coffee plant, there are many steps in the production of a bag of coffee beans. There’s the harvesting, the roasting, the processing, the fermenting, the packaging, the designing of the bags.. Sadly the limitations of the coffee supply chain causes coffee farmers to walk away with little profit for all the work, risk, and love that goes into nurturing the crop that many rely on for their cup of morning coffee. One local coffee shop is flipping the script and going beyond fair-trade coffee.
Convivio Café is a women-owned, Guate-inspired, bilingual café located at 4935 West 38th Ave in Denver. They put an emphasis on keeping most of the supply chain in the country of origin, Guatemala. Co-owners aka “the socias” are Kristin Lacy and Vivi Lemus who bonded over their collective love for hospitality, culturally-rooted food and drink, community, and connection to Guatemala. Kristin spent three years living and working alongside coffee farmers in Guatemala. Vivi grew up in Guatemala immersed in a culture that revolves around hospitality, café, and delicious food. Along with cafecito, Convivio also offers pandulce and other guate-inspired treats. Vivi crafted the menu from family recipes she grew up with along with other regional favorites. Their menu rotates seasonally and is locally sourced when possible.
In Guatemala, a convivio is a get together where all are welcome. Convivio Café is a space for people to spend time together and celebrate diversity. Kristin joined us on The Morning Set to share more about their café, where they’re building community one cup at a time.
